The teeniest speck of avocado mash got on his finger and shhhhh hit the fan…..

Sunday morning made “easy”. With the stress of, well, life, along with Thanksgiving being only days away (and seven pies that need to be made/baked) I needed something to fuel my morning, and the mornings to come. Nothing does it like protein packed avocados (smashed form), eggs (in the shape of STARS) & bacon (bits). The king ingredients for a dynamite breakfast. 

I wasn’t going to even make an “official” post for this (just on my instagram…. follow me if you don’t already!) but I received a couple of e-mails regarding it so I figured why not make Mondays post as easy as possible. Plus I love having an excuse to show off my little man any chance I get ;).

Avocado Mash, Bacon Bits & Shaped Eggs

Ingredients
  • 1 Avocado
  • 4 slices bacon
  • 4 eggs
  • ⅛ tsp garlic powder
  • Salt & Pepper to taste
Instructions
  1. First in a small bowl slice your avocado in half, remove the pit, and scoop insides out into bowl. Smash avocado with fork, stir in garlic powder, salt & pepper to taste.
  2. Next in a small pan add your four slices of bacon and cook until crispy (not burned) Remove and wrap in paper towel.
  3. In the same pan, pour fat out leaving about a teaspoon of it remaining in pan, crack your eggs and let cook until desired temperature. You want sunny side up eggs here. I decided to flip mine at the very end because I was worried the cookie cutter would break the yolk and create a mess. However cook until desired texture is reached, and then carefully using any cookie cutter that you have (that will fit the yolk) cut, and eat the extra egg. Set aside.
  4. On a small plate add half avocado mixture and smear with back of spoon. Chop bacon into small pieces and sprinkle on top of avocado smash (2 slices a plate) Add your two egg shapes on top. Sprinkle with salt & pepper. Repeat for second plate. Serve warm.

    so I re-pinned this picture onto my psrteneit because it looked so yummy! And TODAY was the day I decided to make it! From the moment I got to work, I’ve started all my conversations off with Let me tell you about my grilled cheese. And everyone is riveted! (seriously, people’s eyes lit up when I told them the ingredients) One of my co-workers even came down to see it at lunchtime. I have to admit, mine didn’t come out as beautiful as yours, but it was amazingly delicious! So thank you for the idea! I think you should re-invent all food. And I will be waiting to see what you come up with next!
