Easy Baked Asparagus Fries

Healthy, quick and delicious! A great crowd pleaser :) And your family won't even know that they are healthy!
Ingredients
  • 1 bunch asparagus, ends trimmed
  • 1 cup panko crumbs (found in international aisle)
  • ½ cup grated parmesan plus more for serving
  • ⅓ cup flour
  • 1 tbsp salt
  • Pepper
  • 2 eggs
  • 1 tbsp honey
Instructions
  1. First preheat your oven to 425 degrees. Lightly oil a baking sheet. Set aside.
  2. Next set up three dipping stations (plate or wide soup bowl will work)
  3. First station take your flour, salt and about a 1 tsp pepper and mix together.
  4. Second station take your two eggs and honey, whisk until smooth and fluffy
  5. Third station take your panko and parmesan and mix together.
  6. Now you're ready to begin dipping and rolling. One at a time, take your trimmed asparagus, roll in flour station first, next dip into egg station and then lastly roll in panko mixture. Align on oven and repeat steps until all asparagus are coated.
  7. Place in oven for about 13-18 minutes, checking at minute 13, until fry mixture is golden brown (or close to it).
  8. Remove and serve immediately.
Notes
Serve with additional parmesan and your favorite dipping sauce. I think ranch tastes DAMN good if you aren't afraid of the calories ;)
