Curried Meatloaf Onion Bombs

Ingredients
  • 1 lb ground turkey
  • 1 lb sweet italian sausage, casings removed
  • ½ cup panko crumbs
  • ¼ cup milk
  • 1 egg
  • 1 red bell pepper, chopped into small pieces
  • 1 tbsp olive oil
  • 2 tsp red curry paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tsp worchestire
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 3-4 yellow onions (cut in half and then carefully peeled, first two layers)
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl add your sausage, ground turkey, egg, panko crumbs & milk. Lightly mix together and set aside.
  3. In a small sauce pan, over medium heat add your oil & red bell pepper. Sauté for about 5 minutes and remove from heat.
  4. Add red curry paste. cumin, paprika, garlic powder, worchestire, salt & pepper. Stir. Let cool for about two minutes and then add to your sausage & turkey mix.
  5. Fold in spices and pepper until just mixed.
  6. Next Take your onion half layers that match up, and add a ball of meatloaf mix to each onion peel, and cover with the other half to form onion shape (meat in middle covered by two halves, see pictures for detail).
  7. Continue to do this until all meat mix is used. Wrap each onion bomb in foil and place in oven on a rimmed baking sheet (or directly on rack with a drip pan below) for 45-55 minutes.
  8. Remove from oven and serve.
