Healthier Pumpkin Apple Muffins

Healthy and protein packed pumpkin apple muffins that are great for breakfast and also incredibly kid friendly!
Ingredients
  • 2 apples, peeled, cored & chopped
  • 2 cups whole wheat flour
  • 1 can pumpkin puree
  • 1 tsp pumpkin pie spice (or ½ tsp cinnamon, ¼ tsp nutmeg, ¼ tsp ground cloves will do)
  • 1 tsp baking soda
  • ½ cup packed dark brown sugar
  • ¼ cup coconut oil (melted and cooled)
  • 2 eggs
  • ½ tsp vanilla
  • pinch of salt
  • Optional Topping:
  • 2 tbsp melted butter
  • 3 tbsp sugar
  • 1 tsp cinnamon
Instructions
  1. Preheat your oven to 350 and place rack in middle position.Line muffin tin (My recipe made 18 muffins....)
  2. In a medium bowl mix your flour, pumpkin pie spice, baking soda, and salt together. Set aside.
  3. In a large bowl mix your pumpkin puree, sugar, coconut oil, eggs and vanilla. Slowly add in your dry mixture and fold until just mixed.
  4. Fold in chopped apples.
  5. Scoop about a ¼ cup of batter into each lined muffin tin.
  6. Place in oven for about 30 minutes (until toothpick comes out almost clean)
  7. Let cool for 5 minutes and then remove from pan and place on wired rack, let cool to room temperature then store in an air tight container or freeze.
