Upside Down Apple Dutch Baby Pancake

Ingredients
For the Pancake
  • ½ cup plus 2 tbsp all purpose flour
  • 1 tbsp pure maple syrup
  • ¼ tsp salt
  • ⅓ cup buttermilk
  • ⅓ cup milk
  • 1 tsp vanilla extract
  • 1 apple thinly sliced (1/6" thin slices)
  • Butter for greasing pan (or any form of grease will work here)
Whipped Topping (Optional)
  • 1 pint heavy whipping cream
  • ⅓ cup goat cheese, whipped (just whip before you add to the whipping cream).
  • 1 tsp vanilla extract
  • 2 tbsp confectioners sugar
Granola Topping (Optional):

Instructions
Pancake:
  1. Preheat your oven to 500 degrees. In a medium bowl mix your dry ingredients (minus apples).. Then add your wet ingredients and whisk until blended.
  2. Next grease pan that you are using with some butter (make sure the pan is very well greased) add your apple slices to the bottom of pan and then add batter.
  3. Place in oven for about 13-18 minutes. Start checking at minute 10 if your oven tends to cook quickly.
  4. Remove from oven and immediately loosen pancake edges. Once cool enough to handle flip pancake over and place back into pan upside down (exposing apples, optional).
  5. Serve with a little whipped goat cheese (recipe below), granola, & syrup.
Whipped Goat Cheese:
  1. In a large bowl add your chilled heavy whipping cream. Whisk until soft peaks form.
  2. Next add your goat cheese, vanilla extract and confectioners sugar. Whip until blended and stiff peaks form. Place in fridge until ready to serve.
