Mango Avocado Lassi Breakfast Pops

Serves: 6 popsicles
 
Ingredients
  • 4 cups non fat greek yogurt
  • 5 tbsp honey
  • ¼ tsp ground tumeric
  • ¼ tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1½ - 2 cups fresh or frozen and thawed mango (about 2 mangoes), cut into ½" pieces
  • ½ cup avocado(or about 1 avocado) cut into smaller chunks
Instructions
  1. First in a food processor add 4 cups greek yogurt, 4 tbsp honey, turmeric, cinnamon and vanilla extract.
  2. Blend together until everything is mixed. Place into a piping bag or a bowl to spoon into popsicle molds.
  3. Next, using the same food processor (you don't need to clean it out if you don't want to) add your mango and avocado pieces. Add your honey.
  4. Process until fruit is completely smooth. Place into a different piping bag.
  5. Next very carefully pipe layers of yogurt onto bottom of your popsicle mold, followed by a layer of mango/avocado and then another layer of yogurt. repeat this process until molds are filled to the top.
  6. Cover molds with plastic wrap (or if they have a cover) and place into freezer for 4-6 hours.
  7. In order to remove popsicle out of molds once frozen, place mold under warm water for about 30-45 seconds or until your popsicle is easily able to slide out (but not like so easy where it becomes just yogurt .....)
