Easy like Sunday morning. That is todays goal, as last night was a ROUGH night. My son overloaded on every berry he could get his hands on. Between the neighbors and niece he was able to manipulate everyone into giving him more, and more, and apparently far more than his little body could handle.

You’re probably thinking, how is that even possible for a 15 month old to do? Trust me it is. He’s king of manipulation. A sly little devil if you ask me. Disguised as the sweetest angel. Winning combination.
 
So what exactly happened? For about three hours straight my son lost his stomach and I would like to say that every little drop landed perfectly in the toilet bowl, however that wold have been far too easy. My hair took the brunt end of it all and I literally am a walking stink bomb. Of course the little shit woke up smiling all the live long day (which i am more than thankful for) while I have been a walking zombie. Currently gliding through my days feeling as if my head is unattached to my body.

So I made apple butter. Not only is it easy breezy, it also fills your home up with the most fabulous aroma. The most quintessential fall scent. No candles necessary. And my home is in need of some deo for its b-o.

But don’t let the name fool you. It isn’t actual butter. Just apples with a liquid of choice and spices cooked down (longer than you would applesauce) until the sugar begins to caramelize and liquid thickens. I like to pair my apple butter with cheese, on top of waffles, toast, biscuits….meat…….everything………. It’s almost like my “fall ketchup”.

Instead of using traditional apple cider as my liquid component I used apple cider vinegar along with honey vs sugar. I also did a smaller batch which is enough for a family of 2-4 who like to use a little bit every day.

Made under three hours no crockpot or food mill necessary!
Ingredients
  • 4 apples cored peeled and chopped
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • ⅓ cup honey
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • pinch of ground cloves
  • pinch of salt
Instructions
  1. In a pot over medium heat add all of your ingredients and bring to a boil.
  2. Once mixture boils cover and turn heat down to simmer stirring every thirty minutes for the next 2-3 hours until desired texture is reached..... try and be patient, the more liquid out the thicker it will be.
  3. Once apple mixture is done cooking remove from heat and let cool for 5 minutes and then pour into a blender or food processor and pulse until silky smooth (a couple of seconds or pulses)
  4. Place in an airtight container and store in the fridge. Serve chilled over breads, meats, baked goods, etc.
