Holiday Chai EggNog

Deliciously smooth and creamy homemade holiday chai eggnog.
Ingredients
  • 7 egg yolks
  • ⅓ cup granulated sugar
  • ¼ cup honey
  • 1.5 cups heavy whipping cream
  • 1.5 cups whole milk
  • 4 chai tea bags
  • 1 tsp vanilla extract
  • ½ tsp salt (or more to taste)
  • ¼ tsp ground cinnamon (plus more for garnish)
  • ⅛ tsp ground nutmeg
  • Cinnamon sticks for garnish
Instructions
  1. In a medium bowl beat together your egg yolks, sugar and honey together until thick and fluffy.
  2. In a medium sauce pan over low heat, add whole milk, cinnamon, nutmeg, vanilla extract, salt and chai tea bags for about 6-8 minutes whisking constantly. Remove from heat. Let cool for about a minute.
  3. Next very slowly pour your milk mixture into your egg mixture while you continue to whisk constantly.
  4. Next pour the nog back into the sauce pan on low heat, whisking until it thickens (but not boiling)
  5. Strain the egg-milk mix using a fine mesh strainer into a bowl.
  6. Add the heavy whipping cream and whisk together until blended.
  7. Chill in the fridge and when ready to serve you can give the nog a little frothing of milk and garnish with some cinnamon + cinnamon sticks.
  8. And then according to my photos you can light the cinnamon sticks on fire to make them smoke and set off your fire alarm.
