Spicy Roasted Heirloom Tomatoes & Garlic Croutons

Ingredients
Roasted Tomatoes:
  • 2 lb assorted tomatoes (heirlooms, cherry, etc) some larger tomatoes quartered, or may keep whole, refer to picture
  • ⅓ cup extra virgin olive oil
  • 1 tbsp red pepper flakes
  • ¼ cup fresh basil leaves, torn into large chunks
  • Salt & Pepper to taste
Croutons:
  • 6 cups stale bread, sliced into 1" cubes
  • ¼ cup olive oil
  • 1 tbsp garlic powder
  • Salt & Pepper
Instructions
Croutons:
  1. Preheat oven to 375 and line a baking sheet with parchment paper.
  2. Next lay stale cubed bread onto lined baking sheet and drizzle with ¼ cup olive oil, sprinkle garlic powder evenly and then toss until everything is mixed together.
  3. Arrange croutons out onto baking sheet (this way there is no overlapping so croutons bake evenly) and then sprinkle with a little salt and pepper on top.
  4. Place in oven for 25-28 minutes, flipping croutons halfway through. Do this until a deep golden brown with little charring (optional) forms.
  5. Remove, cool and bring to room temperature, store in airtight container at room temperature (or keep out until ready to use).
Roasted Tomatoes:
  1. First preheat oven to 425.
  2. Next in a large bowl add all varieties of tomatoes and then olive oil. Toss making sure all sides of tomatoes are coated in oil.
  3. In a baking dish (i used two different ones,to fit the tomatoes comfortably in without overlapping, however squeezed next to each other.. or you may use a 9x13" baking dish) place the oil coated tomatoes. Next drizzle remainder of oil left from bowl evenly on to tomatoes.
  4. Add your torn basil leaves in cracks of tomatoes (see pictures).
  5. Next evenly sprinkle 1 tbsp red pepper flakes.
  6. Sprinkle salt and pepper on top (you may add more when it comes to serving as the larger tomatoes will probably need more salt vs smaller tomatoes.
  7. Bake in oven for 28-30 minutes.
  8. Remove from oven, serve hot (or may bring to room temperature) with a side of homemade croutons.
