Pumpkin, Banana & Olive Oil Bundt Cake

Serves: 12 slices
  • 2 cups pure pumpkin puree
  • 3 ripened bananas, mashed
  • 3 eggs
  • 1 stick of unsalted butter softened (1/2 cup)
  • ½ cup olive oil
  • 1 tbsp white vinegar
  • 3 tbsp milk
  • 1½ tsp pure vanilla extract
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 cups organic cane sugar
  • 3 cups all purpose flour
  • 2 tsp ground cinnamon
  • 1 tsp nutmeg
  1. First preheat your oven to 350 degrees and generously grease and flour your bundt pan.
  2. Next combine 2 cups of sugar, olive oil, butter and eggs and vanilla.. Beat at medium speed with electric mixer until well blended.
  3. Add bananas and pumpkin puree, mix.
  4. In a small bowl add your milk, vinegar and baking soda (mixture will bubble up). Add to wet ingredients and mix.
  5. Next in a separate bowl combine flour, salt, cinnamon and nutmeg and mix together.
  6. Gradually fold dry ingredients into wet ingredients until just combined.
  7. Pour into bundt pan and spread mixture out evenly. Place in oven and bake for 55-60 minutes, or when a knife is inserted and comes out clean.
  8. Let cool until you can handle, wiggle free from pan, turn over onto a wired rack and remove from pan. Bring to room temperature and serve (or cover tightly with plastic wrap to prevent from drying out).
