GF Almond & Oat Protein Waffles

Serves: 8 mini waffles
- 1 cup almond flour
- ¼ cup flax meal
- ½ cup old fashioned oats
- ½ tsp salt
- 1 tsp baking soda
- 3 tbsp maple syrup
- ¼ cup milk
- 2 eggs
- 2 tsp vanilla extract
- 2 tbsp oil
- 1 banana, sliced in to ¼" medallions. (or chopped into small ¼" pieces).
- Butter
- Syrup
- Powdered Sugar
- Turn your waffle iron on and heat.
- While waffle iron is heating, in a medium bowl add all of your dry ingredients together, mix.
- In a small bowl add all of your wet ingredients together (not including banana) and whisk together.
- Fold wet ingredients into dry ingredients.
- Add banana pieces and continue to fold.
- Once waffle iron is ready, spray with some non stick spray (or grease with whatever) and add about ¼ cup of batter (depending on size of waffle iron)
- Close, cook, remove, repeat until batter is done.
- Top with optional butter, syrup & powdered sugar.
