GF Almond & Oat Protein Waffles

Serves: 8 mini waffles
  • 1 cup almond flour
  • ¼ cup flax meal
  • ½ cup old fashioned oats
  • ½ tsp salt
  • 1 tsp baking soda
  • 3 tbsp maple syrup
  • ¼ cup milk
  • 2 eggs
  • 2 tsp vanilla extract
  • 2 tbsp oil
  • 1 banana, sliced in to ¼" medallions. (or chopped into small ¼" pieces).
Optional Toppings:
  • Butter
  • Syrup
  • Powdered Sugar
  1. Turn your waffle iron on and heat.
  2. While waffle iron is heating, in a medium bowl add all of your dry ingredients together, mix.
  3. In a small bowl add all of your wet ingredients together (not including banana) and whisk together.
  4. Fold wet ingredients into dry ingredients.
  5. Add banana pieces and continue to fold.
  6. Once waffle iron is ready, spray with some non stick spray (or grease with whatever) and add about ¼ cup of batter (depending on size of waffle iron)
  7. Close, cook, remove, repeat until batter is done.
  8. Top with optional butter, syrup & powdered sugar.
