My weekend wasn’t anything exciting. I ended up sitting my two-year-old-going-on-fifteen-year-old sassy niece along with my currently stage-five-clinger son so I basically wanted to pop my head off. And by that I mean I really wanted a glass of wine at all times. Too bad I’m a cheap drunk, one drink and I’m in the hole, so secret consumption was not even an option. Womp womp. I instead was leashed around told to be quiet/put in my place for the last 48 hours. Clearly we know who was NOT in control here (this is when the wine would have been helpful).

Recipe developing moved quite slowly as I couldn’t sync up their nap times so I had to think “quick”. Recipes with almost zero to none prep work and hands off cooking, letting the tools in front of me do the majority of the work.

As I was on instagram watching the munchkins, I stumbled upon Lady & Pups drool worthy “broccoli steak” photo which you can find here and instantly had to wipe the dribble off of my chin. I knew I needed to recreate but on a much easier scale and also remembered I had to use up the almost rotting broccoli florets that were currently dying in my fridge.

So I did just that. For the flavor I went with garlic powder, soy sauce and some grated asiago cheese and not to toot my own horn but this combination was killer. My neighbors may have wanted to kill me do to the gas-like stench the cooked broccoli and asiago produced however my belly was doing a happy dance.

This recipe only makes enough for two, however if it is the only thing you are snacking on I would recommend doubling it, as I consumed the whole dish post picture taking. They are like damn shrinky-dinks once roasted. Whoops.

Roasted Broccoli with Soy & Asiago

Addicting and healthy roasted broccoli mixed in soy sauce with melted shredded asiago cheese. The perfect popcorn replacement 🙂
Ingredients
  • 1-2 heads of broccoli cut into florets (about 4-6 cups)
  • 2-3 tbsp olive oil for drizzle
  • 1 tbsp garlic powder
  • 2 tbsp low sodium soy sauce
  • ½ cup shredded asiago cheese w/ extra for serving
Instructions
  1. Preheat oven to 450 & place rack on middle level
  2. take your florets and place on rimmed baking sheet. Toss with olive oil and then sprinkle with garlic powder.
  3. Spread out on sheet and place in oven for 18-22 minutes (until garlic is crisp and brown with toasted tops
  4. Remove from oven and immediately toss with soy sauce and cheese.
  5. Throw back in oven for an additional 2-3 minutes if you want cheese to melt a little more.
  6. Serve in a bowl and sprinkle with asiago for serving. Snack attack.
