I have been redoing my Aunts kitchen cabinets and I no joke believe I have early onset arthritis in my wrists. And my ass. If that is even physically possible. I don’t even know why my rear end is included in the pain, but it is. The struggle is real. At first I thought it was going to be a fun project, it sure as hell sounded like one. I also really needed the money so I said yes. If there is ever a time I could go back and eat my words it would be now. I definitely am not cut out for this shit. Don’t get me wrong, I am very grateful to get any type of work right now that I can during this divorce since the baby daddy doesn’t like to follow the rules. That’s cool. Not. But anyways I come home absolutely famished. Because I haven’t eaten in seven hours. And if you look at me, clearly I need to eat at least every two – three hours. I ain’t no wafer. But by the time I get home the last thing I want to do is cook and the first thing I want to do is rummage through the fridge and take a bite out of every block of cheese that I have molding in there. And I wonder why I struggle in the latrine. TMI.
What I did discover yesterday were some big ruby red tomatoes that were on their way out and needed some TLC ASAP. I didn’t want to just slice them and eat raw, I wanted more of a comfort food out of them and then decided I needed to roast them. Anything roasted to me makes me think of the holidays. I needed a little food pick me up. And so I present to you very very easy and painless spicy oven roasted maters. Literally the only labor you need to do is slicing. A little drizzle and sprinkling and then let the oven do the rest. Faaaabulous. I decided to slather some goat cheese on top when they finished roasting, however you can eat them ala carte. Or over some bread.
