Last week I had the pleasure of being part of a small group of innovative people – somehow connected to the food industry in one way or another – to get a personal tour and a little more insight of St Louis’ liquid gold in a bottle, Schlafly Beer, a St. Louis brewery. As well as a taste of their summer 2016 menu carefully crafted by executive Chef KT Ayers who clearly knows a thing or two about food + beer pairings (and let me tell you, it isn’t just pretzels).
The menu uses 100 percent all local ingredients (okay except for the pine nuts) from their farmers market that they put together every Wednesday and from their very own garden out back (which by the way….. has a miniature golf course…. ahmazing). Needless to say, the food was great and the beer was excellent, I was 100 percent hoppy 😉
They also gave us a chance to try their new IPA, that comes out today (a strictly local release), Expo IPA.
“The art is blending…… an Exposition of hops” Dan Kopman, cofounder of Schlafly, informing us that this new IPA uses eight varieties of hops from three continents, creating a very well balanced flavor and bite at the end that doesn’t leave you feeling completely bitter. Definitely more of an art than a science.
Well done you guys, well done.
