It’s strange to sit back and look at your life and try to figure out how you got to where you are today. Currently I’m sitting back (with a glass of wine the size of Dark Helmets dome piece) and am trying to figure out just that. I don’t regret anything, I’ve done regrets before but this time if I had regrets it would involve creating the most beautiful baby so I don’t allow myself to look back. God gave us one direction —-> forward.
So with my so obvious forward way of thinking I decided to turn what used to be my favorite veggie fry (zucchini) into asparagus fries. YUM. The best part about asparagus fries is that the only prep work they need are trimming the ends… no slicing, no knife skill needed. Just snap ’em and they trim themselves. Then roll baby roll.
And if the title didn’t give it away…. they are baked! NOT fried. No splattery oil mess for you! Also helps ya keep that waistline trim…. maybe we can finally achieve the thigh gap? HA. Who are we kidding. I absolutely dipped these in ranch dressing to make up for all of the calories that these veggie fries were lacking 😉
