Okay…. SO I’m going to get straight to the point here since one of my eyes is officially non functioning due to a sneak attack from my toddler. 

Being dramatic? 

Yeah, maybe. But it really does hurt. at the current moment though that isn’t even my biggest complaint…. my doctor dilated my pupil which she said would help with the pain (since my eye was having some serious muscle contractions I guess because of the abrasion) but it is still dilated. We are going on 36 hours of a dilated pupil here. I’m like seeing a blurry mess in one eye and the other is working over time to make up for the drunk guy. 

Trying to keep up the right eye by drinking copious amounts of wine. Like the saying goes, if you can’t beat ’em, join ’em.

So back to getting to the point of this post, I probably could have easily just posted pictures on the Gram (insta) and let you read the recipe from there, it is that simple…….. but I didn’t and so here it is. And I know these have been done before, but I don’t think with my specific spicy/sweet twist.

These spicy sweet potatoes wrapped in maple syrup dipped bacon are a great go to snack for your after school kiddos or after work happy hour drinkers. Or non drinkers. You honestly don’t have to drink with any of the food that I post, I just like a good glass of wine with my meal (after the baby is in bed, makes it more enjoyable/special)

Maple Bacon Wrapped Spicy Sweet Potato Wedges

Ingredients
  • 2 sweet potatoes sliced in half and then length wise into ¼" wedges
  • 1 lb/package bacon (personal preference don't use thick cut)
  • 1 tbsp olive oil
  • 1 tbsp cayenne pepper
  • 14 cup maple syrup
  • 1 tbsp salt (plus more for taste, if necessary)
Instructions
  1. First preheat your oven to 400 degrees.
  2. Take your sweet potato wedges, place in a plastic bag (or bowl, but bag is the easiest and cleanest way to toss... I use leftover grocery bags). Add your olive oil, cayenne pepper and half of your salt. Toss/shake.
  3. Next take your bacon and dip into the ¼ cup of maple syrup, using your fingers to wipe away some of the excess syrup.
  4. Take your wedges and wrap each one with a slice of bacon. This part is up to you, the larger wedges I use full slices of bacon, for smaller wedges I cut the back in half and use half a slice per wedge. It depends on the size of your potato. Count your slices vs wedges that are cut and go from there.
  5. Next arrange wrapped potato wedges on a baking sheet. Sprinkle with remaining salt all over.
  6. Place in oven for 18 minutes, flip wedges over and bake for an addition 5 - 10 minute or until bacon is crisp but not burned.
  7. Serve warm or at room temperature.
