I hesitated adding the “No Cream” bit to the header above. I didn’t want to scare anyone. Sometimes, at least in my opinion, right away when something says “healthy” or “no cream” I automatically set the recipe up for failure. I’m like, there is no way this is going to taste good if a) it’s healthy b) no added fat is involved. Like…………. why don’t you just hand me a glass of wine with no alcohol. Great…………………………. nope.
But all this recipe needed was a little TLC and BAM, it turned out pretty gosh dang good (I actually, believe it or not, am trying to work on my ‘potty’ mouth. NOT because I frown upon a truck drivers mouth, it’s just that I’m pretty sure my son has been saying ‘Oh Shit” a lot lately -it sounds more like “Oh Shhhh- and once my (ex) husband starts to catch on I’m going to be in big trouble).

Another amazing factoid about this here roasted asparagus soup? The only time consuming thing is the prep work, which literally is just you trimming ends of asparagus and dividing the stems into thirds……. Oh and you need to chop up an onion. That’s it. Your kitchen tools will do the rest for you.

OH one thing, especially if your’e a strange bird and this is your first time eating asparagus (do you live under a rock?) It makes your pee smell really really bad. Which can also be kind of funny if you serve this to someone who isn’t very familiar with asparagus. I actually did this to my (ex) brother-in-law and he freaked. It was great. My humor is also a little twisted if you haven’t gathered that by now.
If you are NOT on any diet but would like to eat this, definitely would recommend serving the roasted asparagus soup with some bread for dipping. I would recommend my buttermilk loaf (which can be made from start-finish in under three hours). Sprinkling a little bit of parmesan on top would also taste fantastic! But I would also sprinkle parm on top of my ice cream if it was socially acceptable.
I love spring so much and last week in NY we had a bit of a tesaer…this week it’s back to winter coats and hats. I love what you’ve found. it makes me excited knowing that soon the season and warm weather will be here to stay!
